Why did I decide to write a book? Because my patients asked me to.

People are confused, they no longer know who to believe, and that is understandable. I realized that there are so many doubts about what we should eat, so many questions and countless false myths, propagated by wild and, often, untruthful advertising. All for the sake of profit and to the detriment of our health.

You have thus chosen to purchase a book dealing with nutrition: wow, what courage! You will surely own others at home; in bookstores, in the section devoted to this topic, volumes can now be counted by dozens, if not, even, hundreds! In this book, however, you will not find a typical institutional dietary line; on the contrary, many statements you will encounter go "against the grain."

What does it mean to eat healthy? Who are we to believe? Ornish who says all animal foods should be avoided, Dukan who proposes a protein diet, Lustig who demonizes fructose, Veronesi who condemns red meat? In such a babel of conflicting information, one no longer knows who to believe. Nutrition is not an exact science, and therefore lends itself to many interpretations, which follow market rules. Profit, in the order of billions, is unfortunately able to influence even the scientific societies that enact dietary guidelines. Don't believe it? But just think of the absurd amounts of carbohydrates that are recommended for diabetics: up to 360 grams of bread a day!

But it's so simple: to be healthy we should eat what Mother Nature gives us and we should cook it properly ourselves!

You are always the recipients of this book, in other words, those who wish to eat real foods, not industrially constructed in the laboratories of the food industry. Real foods: meat from proper farms, which means cows, goats, sheep and whatever else that live free in the summer on the pastures, eating grass and hay, fully respecting their natural biorhythm; game; fish possibly caught, without impoverishing and destroying our seas; cheeses made from the milk of the aforementioned animals; eggs from hens that wallow in the yards of our farms; fruits and vegetables possibly in season and from the region where we live. By eating in this way your body will get everything it needs and gradually be able to get the energy it needs mainly from fats and less and less from sugars.

I want to tell you how exceptional it is to eat lowcarb, in other words LCHF (Low Carb High Fat), with a low carbohydrate load and high fat intake, especially if you suffer from glucose metabolism disorders.

 

In recent years I have witnessed the growing need for people to be informed about the meaning of proper nutrition. The economic interests behind the food industry and, believe me, the pharmaceutical industry as well, are mind-boggling: it has become a duty for me to disseminate this kind of information, heedless of thus defying convention and anyone who does not care about your health.

The world of nutrition is changing, people now have access to a lot of information, which puts them in the advantageous position of making conscious choices about what they put in their cart and then on their plate. However, I see in my daily life that the absence of this kind of information or the intentional dissemination of misconceptions driven by economic interests leads many people to eat poorly.

We can eat better, and thus live better!

For decades we have watched helplessly as children become obese and ill (think of the staggering increase in the numbers of autism and so-called hyperactivity syndrome: did no one ever tell you that this increase correlates directly with sugar consumption?!), not to mention the mind-boggling increase in diabetes, cancer, hypertension, heart attack, stroke, Alzheimer's,......... many of us think that at 50 it is normal to have a bit of a belly. Who said that? Do you wish to spend the next 35-40 years weighed down with all the problems that come with it? No way!

You decide what to eat, you determine how to be, because uniquely you are the proponents of your health.

At the end of the day it is more about what we eat than how much we eat.

Our bodies respond biologically to every food we introduce; choosing the right food at the right time is an art.

If we eat the right things for our bodies, we will feel good, full of vitality, get sick less, because we will provide our bodies with what they need to function at their best every day.

Unfortunately, even nowadays we are not taught in college how important nutrition is, there is no course to take, no class to attend. I myself, in more than 25 years of medical practice, have learned from clinical experience that health comes through the gut, but it has been a long and winding path. For six years now, I have been able to solve many of the conditions presented by my patients with a change in eating style, teaching them how to shop and cook, how to devote this time to our health. And that is where this partnership was born, which led to the writing of this book, with recipes of my own and collected from people I have met on my way and with whom we share similar experiences and a love for good food and our health.

In this book we do not talk about calories, nor about how large or small the portions should be, much less do we talk about food weight.

Learn to listen to your body and eat accordingly and stop as soon as you are full.

Do not eat if you are not hungry, solely to distract yourself from boredom or frustrations. The only thing to pay attention to is the amount of sugar in your food. Nothing else.
